Healthy recipe: Kale Chips

Kale is a hardy dark-green cabbage that provides an excellent source of micronutrients, along with calcium, iron, and Vitamin C. Below are a few tasty snack recipes for kale chips.

Spicy Kale Chips

Ingredients:

  • 1 bunch kale, trimmed of stems and torn into bite-size pieces
  • Olive oil
  • ¼ tsp cayenne powder

Lime and Sea Salt Kale Chips

Ingredients:

  • 1 bunch kale, trimmed of stems and torn into bite-size pieces
  • Olive oil
  • ½ lime
  • Coarse sea salt, to taste

 

Instructions:

  1. Preheat oven to 320 degrees Fahrenheit. Line a cookie sheet with parchment paper.
  2. Place kale into large bowl and lightly toss in extra virgin olive oil. Tip: Use just enough olive oil to lightly coat the kale.
  3. Sprinkle seasoning ingredients of choice over the kale. Gently stir seasoning into the kale.
  4. Lay kale in a single layer on the lined cookie sheet and bake for about 40 minutes or until crisp. (Check regularly in to make sure they don’t get overcooked).
  5. Eat immediately once cooled. Store leftovers in an airtight container to keep them crisp for a few days.
